In 2025, Working Title's focus returned to a favourite IPA style: Red. While experimenting with terpenes, thiols, and esters has its place, it is the meeting point of rich malts and expressive hops that truly excites them. This year’s approach involved hopping at nearly every possible stage—mash-in, first wort, coolpool, day zero, high krausen, chill-back, and cold dry hop. The results were decisive: adding more hops at more points in the process delivers a deeper, richer hop experience. It may seem intuitive, but experimentation is the only way to be sure.
Not every addition proved successful for Red IPAs. Day-zero hopping, late fermentation additions, and excessive hopping at high krausen were found to be either underwhelming or overly astringent. Ultimately, the most effective strategy for hopping Red IPAs aligns with the malt bill itself: embrace balance, and simply add more.
