With this beer, North/Buxton used smoked and peated malt, an ingredient they had never used before. Their technique was to make two beers, one rich, strong and slightly sweet imperial stout, the other very similar but using plenty of smoked and peated malt. Once both beers had finished their fermentation, they blended the two until they found the perfect balance of smoke character in the beer.
