The first release of Colonial’s ‘Market’ series has undergone a more extensive souring process than their core South West Sour, with a natural lactobacillus bacteria. Once fully soured, the batch was spiked with fresh lime and coriander seed in the brewhouse. It then underwent a conventional fermentation before cucumber and juniper additions which round out the flavour profile. A small gift of Australian grown Galaxy was then added as a dry hop to compliment the real fruit with hop derived fruit notes. The result is a vibrantly refreshing Berliner-style sour layered with fruit and spice.
